La chef Carolina Arias, especialista en cocina fusi\u00f3n dominicana, ha llevado este postre a la regi\u00f3n del Cibao y lo ha dado a conocer en sus redes sociales (@chefcarolinaarias).<\/p>\n\n\n\n<p><strong>Historia Familiar<\/strong><\/p>\n\n\n\n<p>La receta tiene m\u00e1s de 100 a\u00f1os y ha sido transmitida de madre a hija. Estervina Castillo, de 84 a\u00f1os, aprendi\u00f3 a hacer el moro con dulce de la mano de su madre Etilia, quien a su vez hered\u00f3 la receta de su progenitora. Flora de Grull\u00f3n, hija de Estervina, ayud\u00f3 a impulsar la carrera gastron\u00f3mica de Carolina Arias.<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n Tradicional<\/strong><\/p>\n\n\n\n<p>Originalmente, el moro con dulce se preparaba en el fog\u00f3n de la casa de campo de Estervina en Palomino. Con el tiempo, la preparaci\u00f3n se traslad\u00f3 al patio, utilizando le\u00f1a y carb\u00f3n para cocinar en pailas o calderos, lo que le da un sabor \u00abperfecto\u00bb, seg\u00fan Arias.<\/p>\n\n\n\n<p><strong>Ingredientes<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 libra de habichuelas rojas<\/li>\n\n\n\n<li>1 libra de arroz<\/li>\n\n\n\n<li>1 libra de batatas azucaradas cortadas en cuadros<\/li>\n\n\n\n<li>2 astillas de canela<\/li>\n\n\n\n<li>6 clavos dulces<\/li>\n\n\n\n<li>1 cucharadita de nuez moscada en polvo<\/li>\n\n\n\n<li>2 latas de leche evaporada<\/li>\n\n\n\n<li>1 taza de leche de coco<\/li>\n\n\n\n<li>1 1\/2 litro de leche blanca<\/li>\n\n\n\n<li>2 cucharadas de mantequilla<\/li>\n\n\n\n<li>Az\u00facar blanca al gusto<\/li>\n\n\n\n<li>2 pizcas de sal<\/li>\n\n\n\n<li>2 cucharadas de vainilla<\/li>\n\n\n\n<li>1 taza de pasas maceradas en ron<\/li>\n<\/ul>\n\n\n\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Lleva las habichuelas a ablandar con suficiente agua y saboriza con una astilla de canela.<\/li>\n\n\n\n<li>Una vez blandas y a temperatura ambiente, vi\u00e9rtelas en una olla profunda con un poco de su l\u00edquido de cocci\u00f3n. Mezcla la leche blanca, evaporada y de coco y a\u00f1ade un poco de az\u00facar.<\/li>\n\n\n\n<li>Vierte las batatas y lleva al fuego. Cuando rompa a hervor, echa el arroz, agrega las especias, un poco m\u00e1s de az\u00facar, la pizca de sal y deja cocer a fuego medio hasta que el arroz se abra y las batatas est\u00e9n blandas.<\/li>\n\n\n\n<li>Por \u00faltimo, incorpora las pasas, la vainilla y la mantequilla.
